- Cross-contamination prevention: Clean containers stop raw poultry juices from spreading harmful bacteria like Salmonella and Campylobacter to other foods.
- Food quality and safety: Containers must be in good condition — no cracks, chips, or damage. Damaged containers allow bacteria to hide and multiply.
- Preventing leaks and drips: Properly maintained containers keep raw poultry juices from contaminating shelves, other food, or ready-to-eat items.
- Food safety compliance: Keeping storage containers clean and intact is now a scored audit item. Ensure all run tubs are inspected and replaced if damaged.
